Begin by making the gnocchi dough. In a large pot, pour in the water and add the fine salt. Bring it to a gentle simmer over medium heat. Slowly add the farro flour while stirring constantly to prevent lumps. Keep stirring for about 3 to 4 minutes, or until the dough thickens and pulls away from the sides of the pot, leaving a thin film on the bottom and walls of the pot. -
Shape the Gnocchi:
Transfer the dough onto a clean surface, like a wooden board. Using a dough scraper or flat knife, cut the dough into small pieces, about 2 cm in size. Sprinkle some extra farro flour onto the gnocchi board (rigagnocchi) and gently roll each piece over the ridges to form textured gnocchi. As you finish shaping the gnocchi, place them on a clean kitchen towel laid out on a tray. Continue shaping until all the dough is used up, then set the gnocchi aside. -

In a small saucepan, combine the grated Grana Padano cheese with the heavy cream. Place the saucepan over low heat and stir continuously to melt the cheese into the cream. Keep stirring until the sauce becomes smooth and creamy. Season with freshly ground black pepper and fresh thyme to taste. -

While preparing the sauce, bring a large pot of salted water to a boil. Gently drop the gnocchi into the boiling water. As soon as the gnocchi rise to the surface, they are ready to be drained.
