Gnocchi with Gorgonzola Cream Sauce

Instructions

  1. Prepare the Gnocchi Dough
    Begin by boiling the potatoes until soft, then peel and mash them well. Once mashed, allow them to cool slightly. Add the egg and a pinch of salt to the mashed potatoes and mix well. Gradually incorporate the all-purpose flour, little by little, kneading the dough until it becomes smooth and pliable.

  2. Shape the Gnocchi
    Take small portions of the dough and roll them into long, 2-centimeter thick ropes using your fingers. Cut the ropes into small pieces and gently press each piece with your thumb to create a slight indentation. Roll them on a gnocchi board to form the classic gnocchi shape, or simply use a fork to create ridges.

  3. Cook the Gnocchi
    Lay the formed gnocchi on a tray lined with a lightly floured kitchen towel to prevent sticking. Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water in batches, ensuring they don’t overcrowd. The gnocchi are cooked once they rise to the surface, usually in about 2-3 minutes.

  4. Prepare the Gorgonzola Cream Sauce
    While the gnocchi are cooking, heat the fresh cream in a separate pan over medium-low heat. Add the cubed gorgonzola to the pan and stir gently until the cheese melts and the sauce becomes smooth. Season with a pinch of salt and freshly ground black pepper to taste.

  5. Combine and Serve
    Once the gnocchi float to the surface of the water, remove them with a slotted spoon and transfer them directly into the gorgonzola cream sauce. Let them simmer together for a few moments, allowing the gnocchi to absorb the creamy sauce. Serve the gnocchi with gorgonzola sauce immediately while they are hot and creamy.
