Instructions:
- Begin by preparing the gorgonzola cheese. Carefully remove the rind from the cheese and slice it into small pieces.
- Place the gorgonzola in a pan, add a pinch of black pepper, and turn the heat to low. Let the cheese melt slowly for about 10 minutes, stirring occasionally to ensure it doesn’t burn.
- While the cheese is melting, bring a large pot of water to a boil. Add salt to the water and cook the penne rigate until they are al dente, following the package instructions.
- Once the pasta is ready, drain it, but reserve a bit of the pasta water.
- Immediately add the hot, drained pasta to the pan with the melted gorgonzola cheese. Stir gently to coat the pasta evenly in the creamy sauce.
- Continue to cook the pasta on low heat for 1-2 minutes, allowing the sauce to thicken and coat the pasta. If needed, add a small amount of the reserved pasta water to achieve the desired consistency.
- Remove from heat, plate the pasta, and serve immediately.
