Instructions

  1. Prepare the Red Onions:
    Start by peeling the red onions and slicing them thinly. Set them aside for later use.

  2. Cook the Onions:
    Heat the extra virgin olive oil in a large skillet over low heat. Once the oil is warm, add the butter and allow it to melt. Add the sliced onions to the pan and sauté them gently for about 5 minutes, until they become soft and slightly caramelized.

  3. Add Wine:
    Once the onions are tender and translucent, pour in the dry white wine and allow it to cook off, leaving just the aromatic flavors behind. Turn off the heat once the alcohol has evaporated, and the onions are nicely coated in the oil and butter mixture.

  4. Prepare the Gorgonzola Sauce:
    In a separate small saucepan, pour the whole milk and bring it to a gentle heat. Add the cubed gorgonzola into the milk, stirring occasionally to help it melt into a smooth sauce. Season with a pinch of black pepper. After a few minutes, stir in the finely chopped walnuts, allowing the flavors to meld together. Let it cook for another 10 minutes over low heat, ensuring the sauce becomes creamy and well combined.

  5. Cook the Pasta:
    Bring a large pot of salted water to a boil. Once boiling, add the spaghetti and cook according to the instructions on the package, aiming for al dente texture. Once the pasta is ready, reserve a small cup of pasta water and then drain the rest.

  6. Combine and Serve:
    Add the freshly cooked spaghetti to the skillet with the onions. Without turning the heat back on, pour the creamy gorgonzola and walnut sauce over the pasta, tossing everything together to ensure the pasta is evenly coated. If the sauce feels too thick, add a small amount of the reserved pasta water to loosen it up to your desired consistency.

  7. Final Touches:
    Taste the dish and adjust with a pinch of salt or more black pepper if needed. Serve immediately, garnished with a few extra chopped walnuts for texture and a sprinkle of fresh black pepper.
