Prepare the Flan Base:
Begin by preparing the Grana Padano cheese. Cut off the rind, then grate the cheese finely. In a mixing bowl, whisk together the eggs, grated Grana Padano, fresh liquid cream, a pinch of nutmeg, and a pinch of fine salt. Use a hand blender or whisk to blend everything until you achieve a smooth, creamy mixture. -
Prepare the Baking Molds:
Take 7 cm diameter, 6.5 cm tall baking molds. Lightly brush the molds with a bit of extra virgin olive oil to prevent the flans from sticking. Once greased, pour the cheese mixture into the molds, filling them about 3/4 full. -
Bake the Flans:
Preheat your oven to 160°C in convection mode (or 180°C in static mode). Place the molds in the oven and bake for approximately 45 minutes (or 50-55 minutes if using static mode). The flans are ready when they have formed a lovely golden crust on top and are firm to the touch. -
Prepare the Finferli Mushrooms:
While the flans are baking, clean the finferli mushrooms (also known as gallinacci) by gently brushing the undersides of the caps to remove any dirt. Slice the mushrooms in half. In a large frying pan, heat 40g of extra virgin olive oil and add the whole garlic clove (peeled and halved). Sauté the garlic until fragrant, then remove it from the pan. Add the prepared mushrooms and cook them over medium-high heat, stirring occasionally. Once the mushrooms have softened, pour in the white wine to deglaze the pan. Let the wine cook off, then season with salt and black pepper. Set aside. -
Assemble the Dish:
Once the flans are ready, carefully remove them from the oven and allow them to cool slightly. Once they have cooled enough to handle, remove them from their molds. Carefully peel away any parchment paper, and gently flip them onto a serving plate. -
Garnish and Serve:
Top each flan with the sautéed finferli mushrooms, arranging them artfully on top of the golden flans. Serve immediately while the flans are warm and enjoy this delicious dish.
