Instructions:

  1. Prepare the Grapes: Begin by thoroughly washing the black grapes under cold running water. Once clean, remove the grapes from their stems and place them into a large pot.

  2. Cook the Grapes: Add 120g of water to the pot with the grapes. Cover the pot with a lid and bring the mixture to a simmer over medium heat. Let the grapes cook until soft, which should take around 10 minutes.

  3. Extract the Juice: After the grapes have softened, pass them through a food mill or a fine-mesh sieve to extract all the juice, keeping it aside for later use. Discard the skins and any seeds that remain.

  4. Prepare the Dry Ingredients: In a separate bowl, combine the sugar and the flour. Stir well to ensure they are fully incorporated.

  5. Combine Wet and Dry Ingredients: Gradually add the fresh grape juice to the dry ingredients while whisking vigorously. This will help to prevent any lumps from forming in the mixture, ensuring a smooth consistency.

  6. Cook the Mixture: Transfer the mixture to a clean pot and place it over low heat. Stir continuously to prevent burning. Slowly bring the mixture to a boil. Continue to cook, stirring occasionally, until the mixture thickens and takes on a rich purple color. This should take about 10–15 minutes.

  7. Set the Pudding: Once the mixture has thickened, remove the pot from the heat. Spoon the thickened grape mixture into six small ceramic or silicone molds, each holding approximately 100g. If you don’t have molds, small aluminum molds will also work perfectly.

  8. Chill and Serve: Cover each mold with plastic wrap to prevent a skin from forming on the surface as the sugoli cool. Allow them to cool to room temperature, then refrigerate for at least two hours to set.

  9. Enjoy: After chilling, the Sugoli d’Uva will be ready to serve. These delightful grape puddings are perfect for a sweet, refreshing treat that showcases the fresh flavors of the season.
