A definite favorite of my family’s, this Cheesy Potato & Ham Soup is a hearty, comforting dish that freezes well and is perfect for those chilly evenings. It’s a creamy blend of potatoes, ham, vegetables, and cheese, served with a side of fresh bread or rolls. With a shorter prep time if you utilize a food processor, it’s a go-to meal that’s both delicious and filling.

Ingredients
- 3 potatoes
- 1/2 cup celery
- 1/2 cup carrot
- 1/2 cup onion
- 1 1/2 cups water
- 1 chicken bouillon cube
- 1 1/2 cups milk
- 2 tablespoons flour
- 1/3 pound Velveeta cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Recipe Instructions
- In a large, heavy saucepan, combine potatoes, celery, carrot, onion, water, and chicken bouillon cube.
- Bring the mixture to a boil over medium-high heat.
- Cook until the vegetables are tender, which usually takes about 20 minutes.
- In a separate bowl, mix together milk and flour until well combined.
- Add the milk and flour mixture to the saucepan with the vegetables.
- Continue cooking, uncovered, until the mixture comes to a boil again, stirring nearly constantly to prevent sticking.
- Once boiling, add the Velveeta cheese, salt, pepper, and diced ham to the saucepan.
- Stir until the cheese is melted and all ingredients are well combined.
- Serve hot with your favorite fresh bread or rolls.
Note: I usually double this recipe to have extra leftovers for later.
