Instructions

  1. Marinate the Chicken:
Begin by preparing the green paste for the marinade. In a mixer grinder, blend together the coriander leaves, mint leaves, and green chilli into a smooth paste. Set this paste aside.

  2. Prepare the Marinade:
In a large bowl, add the ground paste, turmeric powder, garam masala powder, amchur powder, cumin powder, curd, and fresh cream. Mix everything well until combined into a smooth mixture.

  3. Marinate the Chicken:
Add the chicken pieces to the marinade along with salt to taste. Ensure that the chicken is well coated in the marinade. Cover the bowl and let the chicken marinate for at least 1 hour. This will allow the flavors to meld and the chicken to become tender.

  4. Cook the Chicken:
After the marinating time, heat a heavy-bottomed pan (or kadai) and add a little oil. Add the marinated chicken pieces to the pan and cook them until they are golden brown and crisp on the outside, and fully cooked inside. Remove the chicken pieces from the pan and set them aside.

  5. Prepare the Gravy:
In the same pan, add the remaining marinade (the leftover gravy from the chicken marinade). Cook this gravy for about 3 to 4 minutes, stirring occasionally, until the mixture thickens and reduces slightly.

  6. Final Adjustments:
Check the seasoning and salt of the gravy. If needed, add more salt or spices to taste. Then, pour in some fresh cream and a little water to adjust the consistency of the gravy. Cook for another 2 minutes until the gravy is smooth and creamy.

  7. Combine Chicken and Gravy:
Add the cooked chicken pieces back into the pan with the gravy. Stir to coat the chicken well with the gravy. Let it cook for an additional 2 minutes so that the flavors come together.

  8. Serve:
Serve the Hariyali Chicken Tikka Masala hot with your choice of Tawa Paratha, Garlic Naan, or Phulkas. For a complete meal, pair it with Burani Raita, Saunf Aloo, and Dal Kebab.
