Garam Masala Powder 1/2 teaspoon
Chaat Masala Powder 1/2 teaspoon
Fresh Cream 1/4 cup
Salt To taste
Butter (Salted) 1 tablespoon

Instructions

  1. Prepare the Hariyali Masala:

    • In a blender, coarsely grind the fennel seeds, coriander leaves, mint leaves, green chillies, and ginger with a little water to form a smooth paste.
  2. Cooking the Gravy:

    • Heat the salted butter in a pan over medium heat. Once the butter is melted, add the whole spices — cinnamon stick, bay leaf, and cardamom pods. Sauté for a minute, allowing the spices to release their aroma.
    • Add the pureed tomatoes to the pan. Cook until the raw smell of the tomatoes dissipates, and the oil starts to separate from the mixture. This will take approximately 5-7 minutes.
  3. Adding the Green Masala:

    • Stir in the freshly ground Hariyali masala paste into the pan, followed by the garam masala and chaat masala. Sauté everything on low heat for 4-5 minutes until the spices blend well with the tomato base.
  4. Simmer the Gravy:

    • Cover the pan and let the masala cook through for about 4-5 minutes. This allows the flavors to develop and the gravy to thicken slightly.
  5. Finishing the Dish:
