Salt and pepper to taste

Instructions:

  1. Prepare the Meat Mixture:

    • In a saucepan, melt butter over moderately-low heat.
    • Add chopped onions, sliced carrots, and chopped celery ribs.
    • Cook, stirring occasionally, until the vegetables are softened.
  2. Add Flavor:

    • Pour in the dry white wine and cook the mixture for 3 minutes.
  3. Create the Roux:

    • Sprinkle in the all-purpose flour and cook the roux, stirring, for another 3 minutes.
  4. Thicken the Sauce:
