Description:

These Yogurt Deviled Eggs are a creamy twist on a classic appetizer. Made with plain low-fat yogurt, herbs, and spices, they are a healthier option without sacrificing flavor. Perfect for parties, gatherings, or a delicious snack any time of day!

Ingredients:

  • 6 hard-boiled eggs
  • 1/4 cup plain low-fat yogurt
  • 1 small onion, finely chopped
  • 1 teaspoon parsley flakes
  • 1 teaspoon dried chives
  • 3/4 teaspoon lemon juice
  • 1/4 teaspoon prepared mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon Worcestershire sauce
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika

Instructions:

  1. Prepare the Eggs:

    • Cut the hard-boiled eggs in half lengthwise.
    • Carefully remove the yolks and place them in a bowl. Set aside the egg white halves.
  2. Prepare the Filling:

    • Using a fork, mash the egg yolks until smooth.
    • Add in the plain low-fat yogurt, chopped onion, parsley flakes, dried chives, lemon juice, prepared mustard, salt, Worcestershire sauce, pepper, and paprika to the bowl with the mashed yolks.
  3. Mix the Ingredients:

    • Thoroughly blend all the ingredients together until smooth and well combined.
  4. Fill the Egg Whites:

    • Spoon or pipe the yolk mixture evenly into the reserved egg white halves, filling each one with about 1 tablespoon of the mixture.
  5. Alternative Mixing Method:

    • For an alternative mixing method, place the egg yolks and all the remaining ingredients except for the egg white halves into a plastic storage bag.
    • Seal the bag tightly and knead it until all the ingredients are well blended and the mixture is smooth.
    • Push the mixture towards one corner of the bag and snip off about 1/2 inch from the corner.
    • Gently squeeze the bag to pipe the yolk mixture into the egg white halves.
  6. Chill and Serve:

    • Once filled, chill the deviled eggs in the refrigerator for at least 30 minutes to allow the flavors to blend.
    • Serve chilled and enjoy these creamy Yogurt Deviled Eggs as a delightful appetizer or snack!
