Boil an Egg: Start by boiling an egg to a hard consistency. Once cooked, carefully remove the yolk, set it aside for later use, and discard the white.

Prepare Garlic: Peel and finely chop the garlic cloves, making sure to remove the inner germ to prevent bitterness.

Mash Garlic: Using a mortar and pestle, add the chopped garlic and a pinch of salt. Crush them together until you have a smooth paste.

Blend the Aioli: Transfer the garlic paste into a blender or food processor. Add the fresh egg yolks into the mix. Start blending and, as the mixture combines, slowly pour in the peanut oil in a thin stream. Keep blending until the mixture thickens into a smooth, creamy consistency.

Add Lemon & Egg Yolk: Once the aioli reaches the desired texture, stop the blender. Now, add 1 tablespoon of lemon juice along with the crumbled hard-boiled egg yolk. Blend for a few more seconds until well incorporated.

Season: Taste your aioli and adjust the flavor with more salt and white pepper if needed. If you prefer a more tangy aioli, feel free to add a little more lemon juice.

Serve and Store: Transfer your freshly made aioli into a bowl or a glass jar. Cover it and refrigerate until you’re ready to serve. The aioli will stay fresh for up to seven days when properly stored in the fridge.
