Creamy Indonesian Chicken Stew (Opor Ayam)
Ingredients:
- 1 kg fresh chicken, washed and cleaned
- 5 hard-boiled eggs
Spice Paste:
- 3 shallots
- 3 garlic cloves
- 5 candlenuts
- 1 tsp ground coriander
- A pinch of cumin seeds
- 1 tsp ground turmeric
- 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp ground white pepper
- 1 tsp mushroom bouillon
Additional Ingredients:
- Bruised ginger
- Bruised lemongrass
- Kaffir lime leaves
- Bruised galangal
- Bay leaves
- 1/2 coconut, grated and squeezed for coconut milk

Prepare the Spice Paste:
Heat a little oil in a pan and sauté the shallots, garlic, candlenuts, ground coriander, cumin seeds, ground turmeric, salt, sugar, white pepper, and mushroom bouillon until fragrant. -
Cooking the Stew:
Add the coconut milk to the spice paste and cook over low heat to prevent the coconut milk from splitting. -
Add Chicken and Eggs:
Add the chicken and hard-boiled eggs. Simmer until the chicken is cooked through. Adjust seasoning to taste. -
Serve:
Serve hot with steamed rice.
