- 5 red bird’s eye chilies
- 1/2 inch piece of ginger
- 1-inch piece of turmeric
- 15 shallots
- 1 leaf of turmeric (tied into a knot)
- 2 stalks of lemongrass (bruised and tied into a knot)
- 2-inch piece of galangal (bruised)
- 3 to 4 pieces of tamarind slices
- A handful of ruku-ruku leaves (substitute with basil leaves if necessary)
- Salt (to taste)
- Chicken broth (optional, to taste)
- Coconut milk (as needed)
- Water (as needed)

- Begin by grinding the ginger, turmeric, and a pinch of salt until they form a smooth paste.
- Add the shallots and bird’s eye chilies, then pound or grind until well mixed. It’s fine if the shallots are not completely smooth.

- In a large pot, combine the ground red chili paste, the freshly made spice paste, turmeric leaf, lemongrass, galangal, and tamarind slices.
