Kerala Style Cauliflower Kurma Recipe (In English)

Red Chili Powder 1 teaspoon
Coriander Powder 2 teaspoons
Cumin Powder 1/2 teaspoon
Cinnamon Stick 1-inch piece
Curry Leaves 2 sprigs
Thin Coconut Milk 1 cup
Thick Coconut Milk 1/2 cup
Salt To taste
Cashews 5, broken
Oil As required
Fresh Coriander Leaves For garnish

Instructions:

  1. Blanch the Vegetables:

    • Begin by heating water in a saucepan. Add chopped cauliflower, carrot, and green peas. Let them cook for a few minutes until tender but still crisp. Once done, drain the water and set the vegetables aside in a bowl.
  2. Tempering:

    • Heat oil in a frying pan or wok. Add the cinnamon stick and curry leaves. Allow them to cook for about 10 seconds until fragrant.
  3. Cooking the Onions:

    • Add the finely chopped onion to the pan. Sauté until the onions become soft and translucent.
  4. Add Ginger-Garlic Paste and Green Chilies:

    • Once the onions are cooked, add the ginger-garlic paste and green chilies. Sauté for another 30 seconds to release their aroma.
  5. Spices and Tomato Puree:

    • Add the tomato puree along with red chili powder, turmeric powder, coriander powder, and cumin powder. Stir well and cook the masala for about 3-5 minutes, until the oil begins to separate from the spices.
  6. Add Coconut Milk and Vegetables:

    • Pour in the thin coconut milk and add the pre-cooked vegetables to the pan. Season with salt and stir to combine. Let the curry simmer for 5 minutes, allowing the flavors to blend together.
  7. Thicken the Gravy:

    • After 5 minutes, add the thick coconut milk and broken cashews. Stir well and cook for another 5 minutes until the gravy thickens slightly.
  8. Garnish and Serve:

    • Turn off the heat and garnish the dish with fresh coriander leaves and grated coconut. The Kerala Style Cauliflower Kurma is now ready to serve.
