Keto Tahu Cake: A Delightfully Creamy Treat

This Keto Tahu Cake combines the unique texture of tofu with the richness of cheese, sweetened to perfection, and topped with whipped cream for a decadent finish. Perfect for those on a low-carb diet, this cake is both satisfying and delicious.

Ingredients

Ingredient Quantity
Tofu (firm, yellow) 400 grams
Grated cheese (your choice) 50 grams
Sweetener (suitable for baking) 9 sachets
Ghee or clarified butter 2 tablespoons
Agar-agar powder 1 sachet
Corn oil (for frying tofu) 3 tablespoons
Egg whites (large eggs) 3 pieces
Egg yolks (large eggs) 3 pieces
Whipped cream (for topping) As needed
Sprinkles or decorations As desired

Instructions

  1. Prepare the Tofu: Start by mashing the tofu until smooth. For a finer texture, using a blender or food processor is recommended. However, if you’re facing equipment issues, manual mashing works too!

  2. Cook the Tofu: In a pan, heat the corn oil over medium heat. Add the mashed tofu and sauté until the moisture evaporates and the tofu feels light and dry. Once done, remove from heat and let it cool. You should weigh the tofu after cooking; it should yield about 150 grams.

  3. Whip the Egg Whites: In a clean bowl, beat the egg whites until they form stiff peaks. Set aside.

  4. Mix the Base: In another bowl, combine the ghee and egg yolks, whisking until smooth and well combined. Then, add the grated cheese, agar-agar powder, sweetener, and the sautéed tofu to the mixture. Stir everything together until you achieve a homogeneous mixture.

  5. Incorporate Egg Whites: Gently fold the whipped egg whites into the tofu mixture until fully combined, taking care not to deflate the mixture.

  6. Bake: Pour the batter into a greased cake pan. Bake in a preheated oven at 180°C (350°F) until the cake is set and slightly golden, typically around 30-40 minutes.

  7. Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan. After cooling, slice the cake into portions.

  8. Decorate: Top each slice with whipped cream and your choice of sprinkles or decorations for an extra touch of sweetness.
