Instructions

  1. Prepare the Ingredients
    Begin by boiling a pot of water, which will later be used to cook the pasta. Meanwhile, clean the shrimp:

    • Remove the heads and shells.
    • Use a sharp knife to gently cut along the back of each shrimp and remove the black vein (intestine).
    • Finally, slice each shrimp in half lengthwise for even cooking.

    Wash the cherry tomatoes thoroughly and cut them in halves or quarters, depending on their size. Peel the shallot, slice it in half lengthwise, and then into thin slices.

  2. Cook the Shallot and Tomatoes
    Heat the extra virgin olive oil in a large, deep skillet over medium heat. Add the sliced shallot to the pan and sauté until softened. To speed up the process, you can add a small ladle of boiling water from the pot.

  3. Cook the Pasta
    Once the water reaches a rolling boil, add salt and the whole wheat spaghetti. Cook the pasta according to the package instructions, aiming for an al dente texture.

  4. Sauté the Shrimp and Tomatoes
    When the shallot is soft and fragrant, add the cherry tomatoes to the skillet. Sprinkle with a pinch of salt and cook for about 5 minutes, stirring occasionally. Next, add the prepared shrimp to the pan. Stir gently to coat the shrimp in the juices and flavors.

  5. Add the Cream and Finishing Touches
    Lower the heat and pour in the fresh liquid cream, stirring to create a luscious sauce. Turn off the heat, then grate the zest of one lemon over the dish for a refreshing citrus aroma. Toss in a few fresh basil leaves for a hint of herbal flavor.

  6. Combine Pasta and Sauce
    Drain the pasta once cooked, reserving a cup of the starchy pasta water. Add the pasta to the skillet with the creamy shrimp sauce, tossing to coat. If the sauce is too thick, stir in a splash of the reserved pasta water until the desired consistency is achieved.

  7. Season and Serve
    Sprinkle freshly cracked black pepper over the dish to taste. Serve immediately, garnished with additional basil leaves if desired.
