Ingredients:

  • 2 1/2 onions
  • 10 potatoes
  • 1 1/4 cups buttermilk
  • A small handful (about 5 tablespoons) of lovage

Instructions:

Step Description
1 Start by putting the onions into a heavy-based saucepan.
2 Add the stock and bring it to a boiling point very slowly, allowing the onions to soften a little.
3 Meanwhile, coarsely chop a small handful of lovage.
4 Add the potatoes and herbs to the pan, then pour in 1/2 pint of buttermilk.
5 Slightly increase the heat and bring the mixture to a bare simmer.
6 Stir vigorously throughout, as the potato starch will thicken the soup, possibly causing it to stick to the pan base.
7 Half-cover the pan and reduce the heat as low as possible once again.
8 Cook very gently, stirring occasionally, until the potatoes are perfectly tender.
9 Using a blender or food processor, whizz the contents of the pan to a smooth puree.
10 Season with salt and pepper, adding extra lovage if desired.
11 Whizz again and adjust the consistency to taste with a little more stock or buttermilk if needed.
12 Reheat gently if serving hot, or chill thoroughly if serving cold.
13 Garnish each serving with a swirl of buttermilk and a small piece of chopped fresh lovage.
