Instructions

  1. Drain the Yogurt:
    Begin by draining the yogurt to remove any excess water. Pour the yogurt into a fine sieve lined with muslin cloth or a cloth strainer. Place a bowl beneath to collect the whey and allow it to drain for about an hour. The yogurt will become thick and creamy, resembling soft cheese once drained.

  2. Prepare the Mango Puree:
    Once the yogurt has drained, transfer it into a blender. Add the peeled and chopped ripe mangoes, saffron strands (which have been soaked in milk), and cardamom powder to the blender. Blend everything into a smooth, creamy puree.

  3. Sweeten to Taste:
    Taste the mango yogurt mixture and adjust the sweetness according to your preference by adding sugar. You can also substitute sugar with honey if you prefer a natural sweetener.

  4. Freeze the Mixture:
    Pour the mango yogurt mixture into a freezer-safe container and cover it with a lid. Freeze the mixture for about 3 hours, or until it is almost frozen.

  5. Blend to Remove Ice Crystals:
