Instructions

  1. Soak the Lentils: Begin by thoroughly rinsing the masoor dal (red lentils). Soak them in warm water for about 30 minutes to soften.

  2. Prepare the Base: In a pressure cooker, heat the ghee over medium heat. Once hot, add the cinnamon stick, cloves, bay leaf, and cumin seeds. Let them sizzle for about 10 seconds to release their aroma.

  3. Sauté the Onion and Aromatics: Add the finely chopped onion and sauté until it turns golden brown. Next, add the grated ginger and garlic paste. Stir well and cook for 2-3 minutes, allowing the flavors to meld.

  4. Cook the Tomato: Add the chopped tomato and sauté until it softens. Now, stir in the coriander powder, red chili powder, and garam masala powder. Let the mixture cook for another 2-3 minutes until the tomato breaks down and the spices are well incorporated.

  5. Pressure Cook the Dal: Add the soaked masoor dal to the cooker, along with enough water (about 2 cups, or as per your desired consistency) and salt to taste. Stir everything together, then close the lid of the pressure cooker. Cook for 4-5 whistles on medium heat.

  6. Finish with Cream: Once the pressure releases, open the cooker and add fresh cream. Stir well to combine, giving the dal a rich, creamy texture.

  7. Serve: Serve the Masoor Dal Makhani hot with a side of paneer masala, laccha paratha, or jeera rice for a complete and satisfying meal.
