Prep Time: 5 minutes
Cook Time: 48 hours
Total Time: 48 hours 5 minutes
Yield: 1 batch
Description:
Labna is a traditional Middle Eastern yogurt cheese that is deliciously creamy and versatile. It can be enjoyed immediately after preparation, but its flavor deepens and improves with a couple of days of aging. The olive oil used to coat the Labna can also be repurposed in dressings or bread doughs for added flavor.
Ingredients:
- 2 cups extra virgin olive oil
- 75g salt
- Juice and rind of 1 lemon
- 1 teaspoon thyme
- 1 teaspoon mint
Instructions:
-
Prepare the Yogurt Mixture:
- In a bowl, mix together the yogurt, salt, lemon juice, lemon rind, thyme, and mint until well combined.
-
Strain the Yogurt:
- Line a colander with muslin cloth and place it over a bowl or pot to catch the liquid.
- Pour the yogurt mixture into the muslin-lined colander.
-
Hang to Drain:
- Tie the muslin cloth to form a bag around the yogurt mixture.
- Hang the bag over the bowl or pot and let it drain for 48 hours in the refrigerator. This process will help remove excess liquid, resulting in a thicker Labna.
-
Form into Balls:
- After 48 hours, carefully unwrap the muslin cloth and transfer the strained Labna into a bowl.
- Roll the Labna into walnut-sized balls using your hands.
-
Store in Olive Oil:
- Place the Labna balls into a clean, large jar.
- Cover the Labna balls completely with extra virgin olive oil to preserve them. The olive oil will add flavor and act as a natural preservative.
-
Serve and Enjoy:
- Your Labna is now ready to be enjoyed! Serve it as a spread on bread, in salads, or as a flavorful addition to various dishes.
Tips:
- Make sure to use good quality extra virgin olive oil for coating the Labna balls.
- The longer you let the Labna age in the olive oil, the richer and more flavorful it will become.
- Experiment with different herbs and spices like garlic or chili flakes for variations in flavor.
This Labna recipe is perfect for beginners and requires minimal effort for a delightful homemade cheese that captures the essence of Middle Eastern cuisine. Enjoy the creamy texture and tangy flavor of Labna in various culinary creations!
