Description:

Labna is a traditional Middle Eastern yogurt cheese that is deliciously creamy and versatile. Ingredients:

  • 2 cups extra virgin olive oil
  • 75g salt
  • Juice and rind of 1 lemon
  • 1 teaspoon thyme
  • 1 teaspoon mint

Instructions:

  1. Prepare the Yogurt Mixture:

    • In a bowl, mix together the yogurt, salt, lemon juice, lemon rind, thyme, and mint until well combined.
  2. Strain the Yogurt:

    • Line a colander with muslin cloth and place it over a bowl or pot to catch the liquid.
    • Pour the yogurt mixture into the muslin-lined colander.
  3. Hang to Drain:

    • Tie the muslin cloth to form a bag around the yogurt mixture.
    • Hang the bag over the bowl or pot and let it drain for 48 hours in the refrigerator. This process will help remove excess liquid, resulting in a thicker Labna.
  4. Form into Balls:

    • After 48 hours, carefully unwrap the muslin cloth and transfer the strained Labna into a bowl.
    • Roll the Labna into walnut-sized balls using your hands.
  5. Store in Olive Oil:

    • Place the Labna balls into a clean, large jar.
    • Cover the Labna balls completely with extra virgin olive oil to preserve them. The olive oil will add flavor and act as a natural preservative.
  6. Serve and Enjoy:

    • Your Labna is now ready to be enjoyed! Serve it as a spread on bread, in salads, or as a flavorful addition to various dishes.
