Instructions:
To create this delicious meringated coffee, begin by preparing the custard cream. In a small saucepan, heat the whole milk along with the half vanilla bean pod and its seeds. While the milk is heating, whisk the egg yolk and sugar together in a separate bowl until smooth. Once the milk is heated through, slowly pour it into the egg mixture, stirring continuously to combine.
Next, pour the mixture back into the saucepan and continue cooking over low heat, stirring constantly. The custard should begin to thicken within a few minutes. Once thickened, remove from heat and transfer the cream into a bowl. Cover the surface with plastic wrap to prevent a skin from forming and set aside to cool.
While the custard cools, prepare the coffee. For the best flavor, use a moka pot. Fill the bottom section of the pot with cold, low-calcium water, ensuring not to exceed the safety valve. Assemble the moka pot tightly to prevent any coffee from spilling as it brews. Place the pot over low and steady heat to allow the coffee to brew slowly. As the coffee rises, it will form a dense froth on top, ensuring a rich and creamy texture.
Once your coffee is ready, take 30 grams of cooled custard and place it at the bottom of each glass. Spread it evenly along the sides and bottom, covering about three-quarters of the height of the glass. Break the meringues into large pieces and gently crumble them with your hands. Add the crumbled meringues on top of the custard, leaving room for the coffee.
Pour the hot coffee into the glasses, covering the custard completely. Decorate with a generous spoonful of crumbled meringues on top for the final touch.
