Description

This hearty Beef Stroganoff recipe is a cherished specialty of my dad’s, influenced by our Minnesota roots where we prefer it over wild rice instead of the traditional egg noodles. Ingredients

  • 2 cups flour
  • 2 tsp salt
  • 1 cup sliced mushrooms
  • 2 cups chopped onion
  • 1 clove garlic, minced
  • 2 tbsp butter
  • 8 tbsp flour (for sauce thickening)
  • 6 tbsp ketchup
  • 2 cups beef broth
  • 2 cups sour cream
  • 2 cups wild rice

Instructions

  1. Prepare Wild Rice:

    • Place wild rice in a pot and cover with 1 inch of water.
    • Bring to a boil, then remove from heat and pour off water.
    • Rinse rice with cold water until water runs clear.
    • Cover rice with clean water and simmer for 20-30 minutes or until rice is puffy and splitting.
  2. Cook Beef Stroganoff:

    • Dredge sirloin cubes in flour and salt.
    • In a large skillet or wok, melt butter over medium-high heat.
    • Brown the beef cubes in batches until evenly browned on all sides.
    • Add mushrooms, chopped onion, minced garlic, 8 tablespoons of flour, and ketchup to the skillet. Stir well until bubbling.
    • Gradually add beef broth, stirring constantly until well combined.
    • Reduce heat to low, cover, and simmer for 1 hour or until beef is tender and flavors are well melded.
    • Just before serving, stir in sour cream until fully incorporated.
  3. Serve:

    • Spoon the Beef Stroganoff over the cooked wild rice and garnish with fresh parsley if desired.
