Chicken Tetrazzini Recipe

Description:

This Chicken Tetrazzini recipe is a lighter version adapted from a Cooking Light pasta book, making it perfect for those on a low-sodium diet. Despite being lighter, it doesn’t compromise on flavor, making it a hit even with picky eaters. The addition of basil, oregano, and parsley enhances the dish, and it can be easily customized by omitting sherry and pimientos without sacrificing taste.

Ingredients:

  • 1 tablespoon margarine
  • 3 cups fresh mushrooms, sliced
  • 1/3 cup onion, chopped
  • 1/2 cup all-purpose flour
  • 2 1/3 cups no-salt-added chicken broth
  • 2 cups skim milk
  • 1/4 cup light cream cheese
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup dry sherry (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1 cup diced pimientos
  • 7 ounces spaghetti, cooked and drained
  • 2 cups cooked chicken breast, diced

Instructions:

  1. Preheat your oven to 350°F (175°C). Butter a deep 3-quart baking dish and set aside.

  2. In a large saucepan over medium heat, melt the margarine. Add mushrooms and onion, and sauté until all the liquid evaporates, about 5-7 minutes.

  3. Stir in the flour until well combined with the mushrooms and onions.

  4. Gradually add chicken broth, milk, and light cream cheese, stirring constantly. Bring the mixture to a boil, then reduce heat and let it simmer for about 5 minutes, or until slightly thickened, stirring constantly.

  5. Remove the saucepan from heat. Stir in 2 tablespoons of Parmesan cheese, dry sherry (if using), salt, garlic powder, basil, oregano, parsley, and diced pimientos. Taste and adjust seasoning if needed.

  6. Add the cooked spaghetti and diced chicken to the mushroom mixture. Stir until everything is well combined.

  7. Transfer the mixture to the prepared baking dish, spreading it evenly.

  8. Sprinkle the remaining Parmesan cheese over the top of the casserole.

  9. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, uncover and bake for an additional 10 minutes, or until the casserole is heated through and bubbly.

  10. Remove from the oven and let it stand for 5 minutes before serving.
