  • 4 Whole Wheat Tawa Parathas (made into large round sizes for rolls)

For the Stuffing:

  • 4 Lettuce leaves
  • 200g Paneer (Homemade Cottage Cheese), cut into strips
  • 1 Red Bell Pepper (Capsicum), thinly sliced
  • 1 Onion, thinly sliced
  • 4 tbsp Del Monte Tandoori Mayo

Instructions:

  1. Prep the Ingredients: Start by gathering and prepping all ingredients for a smooth cooking process. Make the whole wheat parathas by following the Tawa Paratha recipe. Cook the parathas in ghee or oil, then set them aside.

  2. Cook the Veggies and Paneer: In a saucepan, heat oil over medium heat. Add the red bell pepper and onion, and sauté until they become soft and tender. Once tender, add the paneer strips and Del Monte Tandoori Mayo. Toss everything together, ensuring the paneer is well-coated with the mayo. Be careful not to overcook the paneer to maintain its soft texture.

  3. Assemble the Rolls: Lay out an aluminum foil sheet on a flat surface. Place a paratha over the foil, then arrange lettuce leaves evenly on top. Spoon two tablespoons of the paneer mixture onto one side of the paratha.

  4. Roll the Frankie: Carefully roll the paratha tightly around the filling. Fold the ends of the roll to secure the filling inside the paratha, wrapping the entire roll in the foil.
