Ingredients:

  • 1 cup converted rice
  • 1/2 cup green onion, chopped
  • 1 1/4 lbs boneless skinless chicken breast halves, cut into strips
  • 1 garlic clove, minced
  • 1 tbsp cornstarch
  • 1 cup milk
  • 2 oz cream cheese
  • 4 tbsp Parmesan cheese, grated
  • 2/3 cup ham, diced
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Italian seasoning, to taste

Instructions:

Step Description
1 Prepare rice according to package directions; once cooked, stir in half of the chopped green onions; set aside and keep warm.
2 In a large fry-pan, heat olive oil over medium heat; add chicken strips, minced garlic, Italian seasoning, salt, and pepper. Saute until the chicken is cooked through and no longer pink.
3 Remove the cooked chicken from the pan and set aside, retaining any drippings in the pan.
4 In the same pan, saute the remaining chopped green onions in the drippings until tender; add more olive oil if needed.
5 Stir in cornstarch, then gradually pour in the milk, stirring constantly.
6 Cook and stir over medium heat until the mixture thickens and becomes bubbly.
7 Reduce the heat and add cream cheese to the sauce, stirring until smooth and well combined.
8 Remove the sauce from heat and return the cooked chicken strips to the pan. Add broccoli florets, grated Parmesan cheese, and diced ham.
9 Stir everything together and cook until heated through, and the cheese is melted, ensuring the broccoli is tender yet crisp.
10 To serve, spoon a generous portion of the rice mixture onto individual plates, then top with the flavorful chicken-broccoli mixture. Garnish with additional Parmesan cheese if desired.
