Instructions:

To make Pasta and Potatoes, start by peeling the potatoes and washing them thoroughly. After drying them with a clean kitchen towel, cut them into small cubes or slices, depending on your preference.

Next, finely chop the shallot and rosemary. In a large pot, bring a generous amount of water to a boil, salting it once it begins to bubble. This water will be used for both cooking the pasta and for adding to the sauce as needed later on.

Meanwhile, heat the extra virgin olive oil in a large skillet over medium heat. Add the chopped shallot and rosemary, allowing them to sauté and release their aromatic flavors. Stir occasionally, ensuring they do not burn.
