Instructions

  1. Boil the Pasta:
    Begin by filling a large pot with water and bringing it to a boil. Add a generous pinch of fine salt to the water, which will help flavor the pasta as it cooks. Once the water reaches a rolling boil, add the penne rigate and cook according to the package instructions, typically around 10 minutes, until al dente.

  2. Prepare the Ham and Cream Sauce:
    While the pasta cooks, slice the cooked ham into strips or small cubes, depending on your preference. Set it aside.
    In a large skillet, heat the extra virgin olive oil over medium heat. Add the garlic clove (whole, unpeeled) and sauté it gently in the oil, allowing it to soften and infuse the oil with flavor. This should take about 1–2 minutes, ensuring the garlic becomes fragrant but not browned.

  3. Combine Ham and Cream:
    Once the garlic is aromatic, remove it from the skillet and discard it. Add the sliced ham to the pan and sauté for another 2–3 minutes, letting it lightly crisp and release its flavors into the oil.
    Next, pour in the fresh cream and bring it to a simmer, stirring occasionally. Add freshly ground black pepper and a pinch of nutmeg to taste. Stir in the grated Grana Padano DOP cheese, allowing it to melt smoothly into the sauce, creating a creamy and flavorful base. Taste the sauce and adjust with more salt or pepper as needed.

  4. Finish the Dish:
    By now, the pasta should be just about done. Drain the penne rigate, reserving a small cup of the pasta water (this will help thicken the sauce later if needed). Add the cooked pasta directly into the skillet with the creamy ham sauce. Toss the pasta in the sauce, making sure it is evenly coated. If the sauce seems too thick, gradually add a little pasta cooking water until it reaches your desired creamy consistency.

  5. Serve:
    Once the pasta is well mixed and coated in the creamy ham sauce, serve it immediately while it’s still hot. Garnish with an extra sprinkle of Grana Padano cheese, a few cracks of black pepper, or even a light dusting of nutmeg for added depth of flavor.
