Make the pea-mint puree: While the peas cook, take half of the cooked peas and place them in a blender or food processor. Add five mint leaves and blend until smooth. If the mixture is too thick, feel free to add a bit more vegetable broth to reach a creamy consistency.

Prepare the risotto: In a separate large pan, heat the remaining tablespoon of olive oil over low heat. Add the rest of the onion and sauté until soft. Once soft, add the Carnaroli rice and toast it gently for a few seconds. Pour in the dry white wine and let it evaporate completely.
