  1. Prepare the Cheese: Begin by preparing the Tête de Moine cheese. Remove the rind and place the cheese on its stand. Insert the knife into the central spindle and gently rotate, shaving thin, delicate rosettes of cheese (about 5-6 slices). Set aside.

  2. Prepare the Pears: Peel and dice the Abate pears into small cubes. Set aside.

  3. Sauté the Shallot: Finely chop the shallot and sauté it in a large saucepan with the butter over low heat until softened and translucent.

  4. Toast the Rice: Add the Carnaroli rice to the pan with the shallot and toast it lightly, stirring frequently, until the grains are translucent.

  5. Deglaze with Wine: Once the rice is toasted, pour in 100ml of dry white wine and allow it to evaporate completely, stirring constantly.

  6. Cook the Risotto: Begin adding vegetable broth, one ladle at a time, allowing the rice to absorb the liquid before adding more. Stir frequently to ensure the rice cooks evenly and absorbs the flavors.

  7. Add the Pears and Cheese: Halfway through cooking the rice, add the diced pears and 100g of the Tête de Moine cheese. Season with salt to taste and stir well to combine the flavors.

  8. Continue Cooking: Continue to add the broth, one ladle at a time, as the rice cooks. Once the risotto is tender and creamy, remove the pan from the heat.

  9. Finish the Risotto: Stir in 35g of Tête de Moine cheese and a knob of butter to finish the dish. The result should be a creamy, velvety risotto with a delicate balance of sweet pears and savory cheese.
