Ingredients:

  • 4 cups skim milk, divided
  • 1 cup sugar
  • 3/4 cup short-grain rice
  • 1/2 tablespoon cornstarch
  • 1 egg, beaten
  • 2 canned pears, diced
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Spray a 2-quart baking dish with cooking spray and set it aside.

  2. In a large saucepan, combine 4 cups of milk, sugar, and rice. Bring the mixture to a boil over medium-high heat.

  3. Cover the saucepan, reduce the heat to low, and simmer for 15 minutes, stirring occasionally to prevent sticking.

  4. Meanwhile, mix the cornstarch with the remaining 1 tablespoon of milk until smooth.

  5. Add the cornstarch mixture to the rice in the saucepan, stirring constantly. Bring the mixture back to a boil and cook for 1 minute, continuing to stir.

  6. Remove the saucepan from the heat.

  7. Gradually stir about 1/4 of the hot rice mixture into the beaten egg in a separate bowl. Add the egg mixture back into the remaining rice mixture in the saucepan, stirring constantly to prevent curdling.

  8. Stir in the diced pears and vanilla extract until well combined.

  9. Pour the rice and pear mixture into the prepared baking dish, spreading it evenly.

  10. Combine the brown sugar and ground cinnamon in a small bowl. Sprinkle the mixture evenly over the top of the rice pudding.

  11. Bake in the preheated oven at 350°F (175°C) for 45 minutes, or until the pudding is set and the top forms a light crust.

  12. Remove from the oven and let it cool slightly before serving.

  13. Refrigerate any leftovers for enjoying later.
