Walnuts 1/4 cup

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Total Time: 30 minutes

Servings: 4

Cuisine: Italian

Course: Dinner

Diet: High Protein, Non-Vegetarian

Instructions:

  1. Cook the Spaghetti Pasta:
Begin by bringing a large saucepan of water to a boil. Add a pinch of salt to the water to help speed up the cooking process. Once the water is boiling, add the spaghetti pasta and cook until al dente, which typically takes about 8-10 minutes. Once cooked, drain the pasta under cold running water to stop the cooking process and set it aside. Drizzle with a little extra virgin olive oil to keep the pasta from sticking together.

  2. Prepare the Basil Pesto:
To make the creamy pesto sauce, place the fresh basil leaves, garlic cloves, walnuts, and Parmesan cheese in a food processor or blender. Add the 2 tablespoons of olive oil, a pinch of salt, and black peppercorns. Blend until smooth. If the pesto is too thick, add a little water to reach the desired consistency. Once blended, squeeze in the lemon juice and give the mixture another quick blend to combine.

  3. Prepare the Sun-Dried Tomatoes:
Take the sun-dried tomatoes out of the jar and chop them into bite-sized pieces. Set them aside.

  4. Cook the Chicken:
Cube the chicken breasts into bite-sized pieces. Mince the garlic. Heat a large pan over medium heat and add 2 tablespoons of olive oil. Add the minced garlic to the pan and sauté it for about 30 seconds, or until fragrant. Add the cubed chicken and cook until the chicken turns from pink to white and is fully cooked through (about 7-10 minutes). Season the chicken with salt and freshly ground black pepper to taste.

  5. Combine the Pasta with the Pesto:
Once the chicken is cooked, add the pesto sauce to the pan along with the cooked spaghetti pasta and chopped sun-dried tomatoes. Toss everything together, stirring gently to coat the pasta and chicken evenly with the pesto sauce. Stir-fry on medium heat for another 2-3 minutes to ensure everything is heated through.

  6. Final Adjustments:
Taste the creamy chicken pesto pasta and adjust the seasoning with additional salt and pepper, if necessary. Once everything is well combined and heated through, remove the pan from the heat.

  7. Serve:
Transfer the creamy chicken pesto spaghetti pasta to serving bowls. For the perfect meal, serve with a side of crispy garlic bread and a decadent Rich Dark Chocolate Mousse for dessert.

Enjoy this flavorful and satisfying pasta dish, full of protein and rich pesto goodness, perfect for any occasion!
