Pineapple Rice Pudding Recipe

Ingredients:

4 cups Milk
3 cups Cooked long-grain rice
2/3 cup Sugar
1/2 tsp Salt
1 cup Cream cheese
2 Eggs
1 tsp Vanilla extract
1 cup Pineapple chunks
1/4 cup Brown sugar
1 tbsp Cornstarch
1 tbsp Butter
1/8 tsp Salt
1 tsp Vanilla extract

Instructions:

  1. In a saucepan, combine 3 1/2 cups of milk, cooked rice, sugar, and salt; bring to a boil over medium heat.

  2. Cook for 15 minutes or until thick and creamy, stirring occasionally.

  3. In a mixing bowl, beat cream cheese until smooth.

  4. Beat in eggs and the remaining milk until well combined.

  5. Stir the cream cheese mixture into the rice mixture.

  6. Cook and stir for 2 minutes over medium heat until the mixture reaches 160 degrees Fahrenheit.

  7. Add vanilla extract and mix well.

  8. Spoon the pudding into six dessert dishes.

  9. Drain the pineapple, reserving the juice; set the pineapple aside.

  10. In a saucepan, combine brown sugar, cornstarch, butter, salt, and the reserved pineapple juice.

  11. Bring the mixture to a boil; cook and stir for 2 minutes or until thickened.

  12. Stir in vanilla extract and pineapple chunks.

  13. Spoon the pineapple mixture over the pudding.
