Instructions

  1. Boil the Potatoes: Begin by washing the potatoes thoroughly and placing them in a large pot. Fill the pot with cold water, ensuring the potatoes are fully submerged. Bring the water to a boil, then reduce the heat and cook the potatoes for 30-40 minutes. The exact time will depend on the size of the potatoes. To test for doneness, insert a fork into a potato; it should slide through easily.
  2. Mash the Potatoes: Once cooked, drain the potatoes and immediately mash them in a large bowl. It’s important to mash them while they’re still hot, as they will become smoother and less likely to form lumps when mashed in this state.
  3. Prepare the Fillings: While the potatoes are boiling, cut the fiordilatte cheese (or mozzarella) into small cubes. If the cheese is particularly wet, you can wring out any excess moisture using a clean kitchen towel. Next, slice the Neapolitan salami and cooked ham into small cubes, about 1 cm in size.
  4. Mix the Ingredients: Add the beaten eggs to the mashed potatoes, followed by a pinch of salt, freshly ground black pepper, and a generous drizzle of olive oil. Mix thoroughly until the ingredients are well combined.
