Pumpkin Casserole (Pasticcio di Zucca)

Category: Main Dish

Servings: 4

This delicious Pumpkin Casserole is a comforting main dish perfect for the colder months. With layers of tender pumpkin, crispy bacon, and melted Emmental cheese, it offers a rich, savory flavor. Paired with the creamy goodness of fresh cream and whole milk, this dish promises to satisfy everyone at your table. The addition of fresh parsley provides a beautiful garnish and a burst of freshness.

Ingredients:

Ingredient Quantity
Pumpkin (peeled and diced) 3 kg
Bacon (sliced) 150g
Emmental cheese 150g
Fresh cream (liquid) 250g
Whole milk 200g
Fresh parsley To taste
Fine salt To taste
Black pepper To taste
Butter To grease the pan

Instructions:

  1. Prepare the Pumpkin:
Start by peeling the pumpkin. Remove the seeds and inner filaments. Slice the pumpkin into thin pieces that will layer easily in the casserole.

  2. Grease the Baking Dish:
Butter a 35×24 cm (approximately 14×9-inch) baking dish to prevent sticking and help create a golden crust as the casserole bakes.

  3. Layer the Ingredients:
In the prepared baking dish, arrange the pumpkin slices in a slightly overlapping pattern. Layer the slices with bacon pieces (4-5 slices per layer). Continue layering until all the ingredients are used up, making sure to sprinkle salt and black pepper between the layers for flavor.

  4. Prepare the Creamy Mixture:
In a small saucepan, combine the fresh cream and whole milk. Add a pinch of salt and stir. Gently heat the mixture over low heat, stirring occasionally, just until it is warmed through.

  5. Pour the Cream Mixture:
Once the cream mixture is ready, pour it evenly over the layered pumpkin and bacon in the baking dish, ensuring that the pumpkin slices are fully drenched in the creamy liquid.

  6. Add the Cheese:
Cut the Emmental cheese into thin strips and scatter them on top of the casserole. The cheese will melt and create a beautiful, bubbly topping as it bakes.

  7. Bake the Casserole:
Preheat your oven to 180°C (350°F) in static mode. Place the baking dish in the middle of the oven and bake for about 50 minutes, or until the top is golden and the pumpkin is tender when pierced with a fork.

  8. Serve and Garnish:
Once baked, remove the casserole from the oven and let it cool slightly. Garnish with fresh parsley leaves for a burst of color and flavor.

Serve this hearty pumpkin casserole as a main dish for a cozy family meal or as a side to complement a larger spread.

Enjoy your Pasticcio di Zucca, a wonderful combination of savory flavors that will keep everyone coming back for more!
