Instructions:

  1. Prepare the crust:
Preheat your oven to 325˚F (160˚C). In a medium mixing bowl, combine the crushed graham crackers and 6 tablespoons of melted unsalted butter. Stir until the mixture has a wet sand-like texture. Transfer this mixture to a greased 9×13-inch (23×33 cm) baking pan, and evenly press it into the bottom to form the crust. Once done, chill the crust in the fridge to set.

  2. Make the cheesecake filling:
In a large mixing bowl, beat the cream cheese until smooth. Add the eggs, vanilla extract, and sugar, and continue to mix until everything is well combined and the batter is smooth.

  3. Layer the cheesecake batter:
Pour half of the cheesecake batter into the chilled graham cracker crust and spread it out evenly. Place the pan in the freezer to set for about 20 minutes.

  4. Incorporate the pumpkin puree:
In the same large mixing bowl, add the pumpkin puree to the remaining cheesecake batter. Stir until well incorporated, and the batter is smooth with a lovely pumpkin hue.

  5. Assemble the layers:
After the first layer of cheesecake has set in the freezer, spoon the pumpkin cheesecake batter on top of the original cheesecake layer. Spread it evenly over the first layer.

  6. Bake the cheesecake:
Bake the cheesecake at 325˚F (160˚C) for 30 minutes. The top should begin to set, but the middle might still be a little wobbly. This is normal.

  7. Prepare the crumble topping:
In a mixing bowl, combine 1/2 cup unsalted butter, 1 cup Vivatta maida (all-purpose flour), 1/2 cup brown sugar (Demerara sugar), and 1 tablespoon ground cinnamon. Stir the ingredients until they form a wet sand texture. Once the cheesecake has baked for 30 minutes, carefully spread the crumble topping evenly over the cheesecake.

  8. Finish baking:
Return the cheesecake to the oven and bake for an additional 25 minutes, until the crumble topping is golden brown, and the cheesecake is set.

  9. Cool and refrigerate:
Once the cheesecake has finished baking, remove it from the oven and allow it to cool completely at room temperature. For the best flavor and texture, refrigerate the cheesecake overnight after it has cooled down.

  10. Serve:
Serve the pumpkin cheesecake as a delicious dessert after a hearty meal, such as a Noodle Sizzler with Garlic Pepper Sauce and Baked Vegetables for a complete feast. Enjoy the creamy, spiced layers and crumble topping that make this dessert irresistible.

Tips:

  • Room Temperature Ingredients: Ensure that the cream cheese and eggs are at room temperature to create a smoother filling.
  • Crumble Texture: If you want a more crunchy topping, you can bake the crumble on its own for 10 minutes before adding it to the cheesecake.
  • Chill Time: The cheesecake improves in flavor when allowed to set and chill overnight, so try to plan ahead.

This Pumpkin Cheesecake Recipe combines all the best elements of a traditional cheesecake with the seasonal flavor of pumpkin. It’s a crowd-pleasing dessert that brings together creamy textures and spiced flavors, making it perfect for fall gatherings or any special occasion!
