Pumpkin, Gorgonzola, and Amaretto Pasta (Pasta alla Zucca, Gorgonzola e Amaretto)

Category: First Courses
Servings: 4

Ingredients

Ingredient Quantity
Fusilli Bucati Corti 320g
Pumpkin 300g
Rosemary 2 sprigs
Extra virgin olive oil 50g
Yellow onions 30g
Salt to taste
Black pepper to taste
Ground cinnamon 1 pinch
Vegetable broth 500g
Amaretti biscuits 50g
Gorgonzola cheese 75g

Instructions

  1. Prepare the Pumpkin: Start by slicing the pumpkin in half and removing the skin. Use a spoon to scoop out the seeds and fibers. Then, cut the pumpkin into thin slices and chop them into small, evenly sized cubes. Set aside.

  2. Crush the Amaretti: Take the amaretti biscuits and crumble them roughly by hand. Place the crumbs in a small bowl for later use.

  3. Prepare the Gorgonzola: Slice the gorgonzola into thin pieces and then cut them into small cubes. Set aside, keeping a few cubes for garnish.

  4. Cook the Onion: In a large, wide, non-stick skillet, heat the extra virgin olive oil over medium heat. Add the finely chopped yellow onion and sautรฉ until translucent and fragrant.

  5. Simmer the Pumpkin: Add one ladle of vegetable broth to the skillet with the onions and bring it to a simmer. Then, add the cubed pumpkin and the rosemary sprigs. Allow it to cook, stirring occasionally, until the pumpkin becomes tender, about 10-15 minutes. Season with salt, pepper, and a pinch of ground cinnamon for added depth of flavor.

  6. Cook the Pasta: While the pumpkin is cooking, bring a large pot of salted water to a boil and cook the fusilli pasta until al dente. Drain the pasta, reserving a small amount of the cooking water.

  7. Combine and Toss: Once the pumpkin is tender, remove the rosemary sprigs and transfer the cooked pasta directly into the skillet with the pumpkin mixture. Stir in the vegetable broth to help create a creamy consistency. Add the crumbled amaretti and toss gently.

  8. Add Gorgonzola: Now, stir in the diced gorgonzola cheese, letting it melt into the sauce, creating a rich and creamy coating for the pasta. For a finishing touch, sprinkle some remaining gorgonzola cubes over the top for extra flavor.

  9. Serve and Enjoy: Plate the pasta, decorating with a few more cubes of gorgonzola cheese and a sprinkle of freshly ground black pepper. Serve immediately for a comforting, flavorful meal.

This Pumpkin, Gorgonzola, and Amaretto Pasta is a deliciously comforting dish with the perfect balance of savory, creamy, and sweet flavors. The richness of the gorgonzola pairs beautifully with the sweetness of the pumpkin, while the amaretti add a lovely crunch and depth to each bite. Enjoy this seasonal pasta as the perfect first course for your next dinner gathering!
