Since pumpkin is the “Ingredient of the Month”, I thought I would contribute a few pumpkin recipes. If you like risotto, and are looking for something a bit different, you should give this one a try. I think the nutmeg and gorgonzola cheese are an interesting combination with the pumpkin. The risotto can be served as a side dish or main course.

Ingredients

  • 1 garlic clove
  • 1/2 yellow onion
  • 1 cup arborio rice
  • 1 cup water
  • 3 cups vegetable broth
  • 1 chicken bouillon cube
  • 3/4 teaspoon nutmeg
  • 1 cup pureed pumpkin
  • 1/4 – 1/2 cup gorgonzola cheese
  • 1/3 – 1/2 cup grated parmesan cheese
  • Vegetable oil for sautéing

Instructions

  1. Dissolve Bouillon Cube: In a saucepan, dissolve the chicken bouillon cube in water over medium heat to make the broth.

  2. Sauté Aromatics: In a wide-bottomed pan, sauté the chopped onion and minced garlic in vegetable oil until they are soft and translucent.

  3. Add Rice: Add the arborio rice to the pan with the sautéed onions and garlic. Stir well to coat the rice with the oil.

  4. Add Broth: Pour in the water/bouillon mixture slowly, stirring constantly. Allow the rice to absorb the liquid gradually.

  5. Incorporate Pumpkin: Stir in the pureed pumpkin, ensuring it’s evenly distributed throughout the rice mixture.

  6. Simmer: Let the risotto cook over medium-low heat for about 20 minutes, stirring occasionally to prevent sticking and ensure even cooking. The rice should be creamy and tender.

  7. Season: Sprinkle in the nutmeg, adjusting to taste. Season with salt and pepper if desired.

  8. Add Gorgonzola: Just before serving, add the gorgonzola cheese to the risotto and stir gently until it melts and blends with the rice.
