Description
Since pumpkin is the “Ingredient of the Month”, I thought I would contribute a few pumpkin recipes. If you like risotto, and are looking for something a bit different, you should give this one a try. I think the nutmeg and gorgonzola cheese are an interesting combination with the pumpkin. The risotto can be served as a side dish or main course.
Ingredients
- 1 garlic clove
- 1/2 yellow onion
- 1 cup arborio rice
- 1 cup water
- 3 cups vegetable broth
- 1 chicken bouillon cube
- 3/4 teaspoon nutmeg
- 1 cup pureed pumpkin
- 1/4 – 1/2 cup gorgonzola cheese
- 1/3 – 1/2 cup grated parmesan cheese
- Vegetable oil for sautéing

Dissolve Bouillon Cube: In a saucepan, dissolve the chicken bouillon cube in water over medium heat to make the broth.

Sauté Aromatics: In a wide-bottomed pan, sauté the chopped onion and minced garlic in vegetable oil until they are soft and translucent.

Add Rice: Add the arborio rice to the pan with the sautéed onions and garlic. Stir well to coat the rice with the oil.

Add Broth: Pour in the water/bouillon mixture slowly, stirring constantly. Allow the rice to absorb the liquid gradually.
