Pumpkin Panna Cotta
Category: Desserts
Servings: 4

Ingredients:

Ingredient Quantity
Pumpkin (Violina variety) 200g
Fresh liquid cream 200g
Sugar 35g
Whole milk 30g
Gelatin sheets 4g
Unsweetened cocoa powder 50g
Water 130g
Sugar (for topping) 100g
Chopped hazelnuts to taste

Instructions:

  1. Prepare the Pumpkin Puree:

    • Start by cleaning the pumpkin, removing the seeds and any internal fibers. Then peel off the skin.
    • Cut the pumpkin into cubes and place them in a steamer. Steam for about 10 minutes until the pumpkin is tender and easily mashable.
    • Transfer the steamed pumpkin to a blender and process it until smooth, using a fine sieve to strain it and remove any remaining fibrous bits.
  2. Make the Panna Cotta Base:

    • Soak the gelatin sheets in the whole milk for at least 10 minutes to allow them to soften.
    • In a saucepan, combine the fresh cream and sugar. Add the pumpkin puree to the mixture and place the saucepan on the stove over low heat. Cook for 10 minutes, stirring occasionally.
    • Once heated, squeeze the excess water from the gelatin sheets and add them to the pumpkin-cream mixture. Stir vigorously to ensure the gelatin dissolves completely, ensuring a smooth and consistent texture.
  3. Chill the Panna Cotta:

    • Pour the mixture into molds or small bowls and refrigerate for at least 2 hours, or until it has set and firmed up.
  4. Prepare the Cocoa Topping:

    • In a small saucepan, sift the cocoa powder and add water and sugar. Stir the ingredients together over low heat.
    • Once the mixture has thickened slightly, transfer it to a bowl and let it cool. Stir occasionally to prevent it from hardening too quickly.
  5. Assemble and Serve:

    • Once the panna cotta has set, carefully run a knife along the edges of the mold to release the dessert.
    • Spoon the cooled cocoa topping over the panna cotta, and for an added crunch, garnish with some chopped hazelnuts.

Notes:

  • This rich and creamy pumpkin panna cotta offers a unique twist on the classic Italian dessert, combining the natural sweetness of pumpkin with a smooth, delicate texture.
  • The cocoa topping adds a slightly bitter contrast to the sweetness of the panna cotta, balancing the flavors beautifully.
  • Serve chilled for the best texture and flavor, and enjoy this autumn-inspired treat with family and friends!
