Instructions

Step 1: Prepare the Panna Cotta Mixture
Begin by placing the fresh cream and powdered sugar in a small saucepan. Set it on a low heat and gently warm the mixture, stirring occasionally to dissolve the sugar. Once the cream has heated through and is about to simmer, remove the saucepan from the heat.

Step 2: Infuse the Vanilla
Slice the vanilla pod lengthwise and scrape the seeds into the saucepan with the cream mixture. Stir to combine the vanilla flavor evenly throughout the cream. Then, use a fine mesh strainer to strain the cream into a clean bowl to remove any remnants of the vanilla pod, ensuring a smooth base for your panna cotta.

Step 3: Dissolve the Gelatin
Meanwhile, soak the gelatin sheets in cold water for about 5 minutes to soften. Once soft, gently squeeze out excess water and add the gelatin to the warm cream mixture. Stir until the gelatin has completely dissolved, creating a smooth, creamy mixture.

Step 4: Create the First Layer
Place the fresh raspberries into the bottom of your panna cotta molds. Then, pour half of the cream mixture over the raspberries, just enough to cover them halfway. This first layer will form the base of the dessert, and the raspberries will infuse the cream with their vibrant flavor.

Step 5: Chill the First Layer
Place the molds in the refrigerator and allow the first layer to set for about 1 hour, or if you’re in a hurry, you can place them in the freezer for 30 minutes. This helps the base layer to firm up before adding the next layer.

Step 6: Prepare the Remaining Mixture
While the first layer chills, cover the remaining cream mixture with a piece of plastic wrap. Leave a small gap in the plastic wrap to allow some air to circulate, and keep it at room temperature. Stir the mixture every so often with a whisk to prevent it from setting prematurely.

Step 7: Add the Second Layer of Raspberries
Once the first layer is firm, place the remaining raspberries on top of the panna cotta in the molds. Pour the rest of the cream mixture over the raspberries, completely covering them. Return the molds to the refrigerator and allow the panna cotta to set for at least 2 hours, or until fully firmed.

Step 8: Unmold the Panna Cotta
After the panna cotta has set and is firm to the touch, it’s time to remove it from the mold. To do this, heat a small pot of water until it is nearly boiling. Remove the pot from the heat and place the panna cotta mold into the hot water for about 2 to 3 seconds to loosen the edges.

Step 9: Release the Panna Cotta
Carefully run a small, straight-edged knife around the edges of the panna cotta mold. Then, with a swift and gentle motion, invert the mold onto a serving plate. If the panna cotta doesn’t release immediately, give it a slight shake or tap to help it come out smoothly.

Step 10: Serve and Enjoy
Once the panna cotta is removed from the mold, you can garnish it with extra fresh raspberries or a drizzle of raspberry coulis for added sweetness and a pop of color. Serve immediately or keep in the refrigerator until you’re ready to enjoy this creamy, berry-infused dessert.

Tips for Perfect Raspberry Panna Cotta:

  • For an extra smooth finish, you can use an immersion blender to blend the cream mixture after straining it.
  • If you prefer a firmer panna cotta, you can increase the amount of gelatin slightly.
  • Be sure to use fresh cream for the best texture. Avoid using ultra-pasteurized cream for optimal results.
  • Customize the flavor by adding citrus zest, such as lemon or orange, to the cream mixture for a tangy twist.

This Raspberry Panna Cotta is sure to become a favorite in your recipe collection. With its smooth texture and delightful raspberry flavor, it’s a perfect way to end any meal.
