Creamy Refried Black Beans (Crema di Fagioli)

Instructions:

  1. Soak the Beans: Start by placing the dried black beans in a large bowl and cover them with plenty of cold water. Let them soak for 12 hours. For the best results, it’s recommended to soak the beans overnight.

  2. Prepare the Vegetables: Once the beans are done soaking, drain and rinse them thoroughly. Peel and finely chop the onion and garlic cloves.

  3. Sauté Onion and Garlic: In a large saucepan or skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing them for a few minutes until softened and fragrant.

  4. Cook the Beans: Add the soaked and drained beans to the pan. Sprinkle in the cumin and coriander, then season with salt and black pepper to taste. Stir the ingredients together and add enough hot water to just cover the beans.

  5. Simmer the Beans: Bring the mixture to a gentle boil, then lower the heat and let it simmer for about 40 minutes, or until the beans are tender. Add more water as needed to prevent the beans from drying out during cooking.

  6. Mash the Beans: Once the beans are cooked, use a fork or a potato masher to mash about 3/4 of the beans. You can also use an immersion blender or regular blender to achieve a smoother texture if you prefer.

  7. Final Touches: Stir the mashed beans back into the rest of the whole beans, allowing the mixture to come together. Taste and adjust seasoning with additional salt, pepper, or spices if necessary.

  8. Serve: Once the creamy refried beans are well combined, serve them hot as a delicious side dish. This hearty bean dip pairs wonderfully with rice, tacos, or grilled meats.
