Instructions

  1. Roast the Beets:
    Begin by roasting the beets to bring out their natural sweetness and enhance their flavor. You can either roast them in the oven or cook them in a wok. For a quicker option, I recommend using a wok.

    • Heat 1 tablespoon of extra virgin olive oil in a wok over medium heat. Add the diced beetroots, ginger, and garlic.
    • Season with a pinch of salt and sauté, stirring occasionally, until the beetroots are tender and cooked through.
    • Optionally, cover the wok to speed up the cooking process as the steam will help cook the beets faster.
  2. Blend the Ingredients:
    Once the beets are cooked and tender, transfer them to a food processor. Add the basil leaves, whole wheat bread crumbs, sultana raisins, sour cream (or hung curd), cayenne pepper, and lemon juice to the food processor.

    • Pulse until you achieve a smooth and creamy consistency, ensuring all ingredients are well combined.
  3. Taste and Adjust:
    Taste the beetroot dip and adjust the salt and cayenne pepper according to your preferences. If you’d like it more tangy, you can add a bit more lemon juice.

  4. Serve:
