Instructions
- Preheat your oven to 350°F (175°C) to prepare for roasting the garlic.
- Take the heads of garlic and cut off the tops to expose the cloves; using a serrated knife will make this much easier.
- Place the garlic heads on a square of aluminum foil with the cut side facing up.
- Drizzle with 1 to 2 tablespoons of olive oil (use 2 tablespoons for 2 heads of garlic).
- Seal the foil tightly around the garlic and roast in the preheated oven for about 1 hour.
- After roasting, allow the garlic to cool slightly, then separate the heads into individual cloves and squeeze each clove to extract the roasted garlic.
- In a blender or food processor, combine the roasted garlic with 1 tablespoon of the remaining olive oil and 1/4 cup of heavy cream. Blend until the garlic is finely pulverized.
- Add the remaining heavy cream, sour cream, Parmesan cheese, and season with salt and pepper. Blend again until all ingredients are thoroughly combined. The sauce will be thick at this stage; set aside.
- Cook the tortellini according to the package instructions until al dente, then drain well.
- In a skillet, melt the butter over medium heat. Add the cooked tortellini and toss gently until evenly coated with the butter.
- Pour in the prepared garlic sauce and stir until it becomes thin and well distributed. Let it simmer for about 10 minutes, stirring occasionally.
