Roasted Red Pepper Pasta Sauce Recipe

Ingredients:

Quantity Ingredient
1 Margarine
1 Butter
1 Olive oil
1 Garlic clove
2 Green onions
2 tbsp Flour
1 cup Dry white wine
2 tbsp Dried basil
2 Red bell peppers
Salt and pepper, to taste
Evaporated milk

Instructions:

  1. Roast Red Peppers:

    • Preheat the oven to 425ยฐF (220ยฐC).
    • Lightly spray a pie tin or baking sheet with non-stick cooking spray.
    • Place whole, washed red peppers on the sheet and roast, turning once, for about 20 minutes, or until the peppers are soft and the skin begins to blister and burn.
    • Remove from the oven and allow to cool.
    • Halve the peppers and remove stems, seeds, and pith.
    • Refrigerate or freeze until ready to use.
  2. Prepare the Sauce:

    • In a saucepan over medium heat, melt margarine and olive oil.
    • Bruise the garlic clove with a knife blade and add it to the saucepan.
    • Add green onions and stir frequently until onions begin to wilt and caramelize slightly.
    • Whisk in flour and cook for 30 seconds.
    • Add dry white wine in one smooth stream, whisking constantly.
    • Whisk constantly until the mixture comes to a boil. This process may take several minutes.
    • Boil slowly for 1 minute.
    • Add the roasted red peppers.
    • Reduce heat and simmer until the sauce is reduced to the desired consistency, whisking occasionally.
    • Remove from heat.
    • Add dried basil, salt, and pepper to taste.
  3. Serve:

    • Serve the roasted red pepper sauce over warm pasta. Bowtie or linguine works well.
