Instructions

  1. Soak the Sabudana:
    Begin by soaking the Sabudana in water for about an hour. This will soften the pearls, ensuring that they cook evenly and blend perfectly into the milk mixture.

  2. Prepare the Milk:
    In a large saucepan, pour the milk and bring it to a boil over medium heat. Once boiling, add the sugar and stir until it fully dissolves. Reduce the heat to low and let the milk simmer, allowing it to reduce to about half its volume. This will concentrate the flavors and give the kheer its creamy consistency.

  3. Cook the Sabudana:
    In a separate saucepan, add 2 ½ cups of water and bring it to a boil. Once the water is boiling, add the soaked Sabudana and cook until the pearls turn translucent and tender. This should take around 10 minutes. Drain any excess water and set the Sabudana aside.

  4. Combine the Sabudana and Milk:
    Now, add the cooked Sabudana and cardamom powder to the reduced milk. Stir well and let it cook on low heat for another 10 minutes, allowing the flavors to meld together and the mixture to thicken further.

  5. Prepare the Garnish:
    In a small frying pan, heat the ghee. Add the almonds and sauté them for about 20 seconds until lightly toasted. Then, add the raisins and cook for another 10 seconds until they plump up and release their sweetness. Turn off the heat and pour this ghee mixture into the Kheer.

  6. Final Touches:
    Stir the garnished Kheer well to incorporate the roasted nuts and raisins. Once done, remove the pan from the heat. The Sabudana Kheer is now ready to be served!
