Creamy Salmon and Mushroom Pasta (Pasta Salmone e Funghi Cremosa)

Farfalle pasta 320g
Fresh salmon fillet 600g
Button mushrooms (champignon) 350g
Fresh liquid cream (panna) 200g
Dry white wine 50g
Fresh parsley 1 tbsp
Garlic 1 clove
Red onion 30g
Extra virgin olive oil to taste
Fine salt to taste
White pepper a pinch

Instructions:

To begin making the creamy salmon and mushroom pasta, clean the mushrooms by removing any earthy parts and gently wiping their surfaces with a damp cloth. Trim the stems and set them aside. Next, crush the garlic clove, cut it in half, and set aside. Peel and slice the red onion, then wash and finely chop the parsley.

Take the fresh salmon fillet and remove the skin. Use a pair of tweezers to remove any bones, and cut the salmon into evenly sized cubes.

In a large pan, heat a drizzle of olive oil over medium heat and sauté the chopped onion until it becomes translucent. Remove the garlic halves from the pan, and add the sliced mushrooms. Cook the mushrooms for about 5-6 minutes, stirring frequently until they are tender and golden. Once cooked, set the mushrooms aside.

Meanwhile, bring a pot of salted water to a boil for cooking the pasta. Cook the pasta for 1 minute less than the package instructions, as it will finish cooking in the sauce.

In the same pan, add another drizzle of olive oil and the other half of the garlic. Let it infuse for about a minute, then remove the garlic and add the cubed salmon. Cook for 3-4 minutes, stirring often to ensure even cooking.

Once the salmon is cooked, return the mushrooms to the pan, add the chopped parsley, and deglaze the pan with the dry white wine. Let the wine evaporate completely. Then, pour in the fresh cream and stir until the mixture is smooth and creamy.

When the pasta is done, drain it directly into the pan with the salmon and mushroom sauce. Toss the pasta gently in the sauce, ensuring each piece is well-coated. Allow the pasta to absorb the flavors for a moment before serving.
