Ingredients:

  • 1 1/2 pounds large shrimp
  • 1 1/2 cups dry white wine
  • 1/4 cup chopped onion
  • 1/4 cup fresh parsley sprigs
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1 pound bay scallops
  • 1 tablespoon all-purpose flour
  • 1 cup half-and-half
  • 1 cup shredded Swiss cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon-pepper seasoning
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup sliced almonds
  • 2 cups sliced mushrooms
  • Steamed rice, for serving

Instructions:

  1. Prepare Ingredients: In a large pot, combine the dry white wine, chopped onion, fresh parsley sprigs, 1 tablespoon of butter, and salt. Bring the mixture to a boil over medium heat.

  2. Cook Seafood: Add the large shrimp and bay scallops to the pot. Cook until the shrimp turn pink, approximately 3 minutes. Drain the shrimp, reserving 2/3 cup of the broth.

  3. Prepare Sauce: In the same pot, melt the remaining butter. Add the flour and cook for 1 minute, stirring constantly. Gradually pour in the half-and-half, stirring constantly until the mixture thickens. Add the shredded Swiss cheese and stir until melted.

  4. Season Sauce: In a small bowl, combine the reserved broth, lemon juice, and lemon-pepper seasoning. Gradually stir this mixture into the sauce.

  5. Combine Ingredients: Add the cooked shrimp, bay scallops, and sliced mushrooms to the sauce, stirring gently to combine.

  6. Assemble Casserole: Transfer the seafood mixture to a large buttered casserole dish.

  7. Bake: Cover the casserole dish with foil or a lid and bake at 350°F (175°C) for 40 minutes.

  8. Prepare Topping: In a separate bowl, mix together the breadcrumbs, grated Parmesan cheese, sliced almonds, and melted butter.

  9. Add Topping: After 40 minutes of baking, remove the foil or lid from the casserole dish. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

  10. Finish Baking: Return the casserole to the oven and bake for an additional 10 minutes, or until the topping is golden brown and crispy.
