Prepare the Gatte:
- In a mixing bowl, combine besan with ½ tsp salt, ½ tsp red chili powder, ½ tsp dhaniya powder, and ghee.
- Knead the mixture into a stiff dough.
- Divide the dough into 5-6 portions and shape them into thin, long strips.
- Bring a pot of water to a boil and gently drop the besan strips into it.
- Boil for 5 minutes, then remove from water and cut the strips into small pieces (gatte).

Prepare the Yogurt Mixture:
- Strain the yogurt through a strainer to remove any lumps.
- In a bowl, mix the strained yogurt with ½ tsp salt, ½ tsp red chili powder, ½ tsp dhaniya powder, and 2 tsp turmeric powder until well combined.

Cooking Process:
- Heat oil in a kadhai (wok) for frying the gatte.
- Fry the gatte until they turn golden brown and crispy. Remove and set aside.
- In the same kadhai, add a little more oil if needed and temper with cumin seeds (jeera).
- Pour in the prepared yogurt mixture and cook it for 5-7 minutes, stirring continuously until it comes to a boil.
- Reduce the flame and let it simmer for another 5-7 minutes until the gravy thickens.
- Turn off the heat.
