Pasta with Shrimp in Tomato Cream Recipe 🍝

Ingredients:

  • 2 cloves garlic, minced
  • 1 pound medium shrimp, peeled and deveined
  • 1 green onion, thinly sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/3 teaspoon white pepper
  • 1/2 cup chicken broth
  • 1 cup dry vermouth
  • 1 pound bow tie pasta
  • 10 fresh basil leaves, chiffonade
  • Shaved Parmesan cheese, for serving

Instructions:

  1. Prepare Ingredients:

    • Mince the garlic.
    • Peel and devein the shrimp.
    • Thinly slice the green onion.
    • Chop the sun-dried tomatoes.
    • Chiffonade the basil leaves.
  2. Cook Shrimp:

    • In a 12-inch frying pan over medium-high heat, add oil and minced garlic.
    • Once hot and sizzling, add the shrimp to the pan.
    • Cook the shrimp, stirring constantly until they are opaque in the center, which should take no more than 6 minutes.
    • Once cooked, remove the shrimp from the pan and set them aside.
  3. Prepare Sauce:

    • In the same pan, add sliced green onion, chopped sun-dried tomatoes, white pepper, chicken broth, dry vermouth, and cream.
    • Bring the mixture to a boil over high heat, leaving it uncovered, until it’s reduced to about 1 1/2 cups, which should take around 10 minutes.
  4. Cook Pasta:

    • Meanwhile, cook the bow tie pasta in boiling water until it’s done, which usually takes around 8 minutes.
    • Once cooked, drain the pasta well.
  5. Combine Ingredients:

    • Add the cooked shrimp back into the sauce and stir until they are heated through.
    • Add the drained pasta to the cooked sauce and toss lightly until the pasta is coated evenly.
  6. Serve:

    • Serve the pasta with shrimp in tomato cream immediately.
    • Offer shaved Parmesan cheese and chiffonade basil at the table for garnishing according to taste.
