Carefully detach the heads by gently twisting them. Remove the eyes, as they would turn bitter during cooking. Set the heads aside in a bowl.
- Use kitchen scissors to cut the sides of the shrimp’s shell, breaking it open. Extract the shrimp’s meat from the shell.
