Spaghetti with Shrimp: A Classic Italian Delight

Shrimp 12

Preparation:

  1. Cleaning the Shrimp:

    • Start by cleaning the shrimp. Carefully detach the heads by gently twisting them. Remove the eyes, as they would turn bitter during cooking. Set the heads aside in a bowl.
    • Use kitchen scissors to cut the sides of the shrimp’s shell, breaking it open. Extract the shrimp’s meat from the shell.
    • Make a small incision along the back of the shrimp and remove the black vein inside. Repeat this process for all the shrimp.
  2. Making the Bisque:

    • Heat a drizzle of extra virgin olive oil in a large pot. Add the shrimp shells and heads, allowing them to roast for 4-5 minutes to release their flavors.
    • Add ice cubes to the pot, followed by the water. Bring the mixture to a simmer.
    • While the bisque is simmering, rinse the shrimp quickly, then pat them dry with a paper towel.
  3. Preparing the Shrimp:

    • Cut half of the shrimp into large cubes, approximately 2 cm in size.
    • Take the remaining shrimp and chop them finely with a knife to create a tartare. Transfer the tartare into a separate bowl and cover both bowls with plastic wrap. Place them in the fridge to keep them cool.
  4. Finishing the Bisque:

    • Allow the bisque to reduce, concentrating the flavors. Once it has reduced, use an immersion blender to blend the bisque until smooth.
    • Strain the bisque to remove any solids, leaving only the rich, flavorful liquid behind.
  5. Cooking the Spaghetti:

    • Bring a large pot of salted water to a boil. Cook the spaghetti for half the time suggested on the package.
    • Drain the spaghetti, reserving a little bit of the cooking water, then transfer the pasta into a large skillet.
  6. Combining the Bisque with the Spaghetti:

    • Pour the prepared bisque into the skillet with the spaghetti, stirring until the sauce thickens and coats the pasta evenly. If needed, adjust the seasoning with more salt.
  7. Adding the Shrimp:

    • Add the shrimp cubes to the skillet, gently stirring to combine.
  8. Serving:

    • Using tongs or a ladle, form a nest of spaghetti on each plate, making sure to place some of the shrimp and bisque sauce on top.
    • Carefully spoon some of the remaining bisque sauce from the skillet over the spaghetti.
    • For a finishing touch, create small quenelles (oval-shaped scoops) of the shrimp tartare and place them on top of the dish for a delicate garnish.

  • Adjust Salt to Taste: Always taste the bisque and the pasta before serving. You may need to adjust the salt depending on how salty your water was when boiling the pasta.
